Leave the meat at least 20 minutes outside the fridge before
Rub your meat with salt generously on both sides and apply some oil of your preference.
Preheat your Barbecue (medium heat 150C and 170C) for 10 minutes).
Leave half of the total BBQ surface area without charcoal or without fire if you are using a gas.
Once your BBQ heat has internal heat of between 150C and 170C, you are ready to go.
Lie your steaks directly above the charcoal or fire (direct heat).
It will start to form a crust on the steaks.
Depending on the thickness (4cm – 8cm) of the steak, sear for about 3 to 5 minutes each side flipping it only once.
Afterwards, lie the steaks above the area with no charcoal or no fire (indirect heat) so they can cook on residual heat and close the top of the BBQ (this will cook the inside of the steaks evenly).
Leave for approximately 10 – 15 minutes.
Once cooked, remove the steak from the Barbecue and let it rest for about 10-15 minutes, allowing the juices to settle and the marbling to moisten (Resting the steak is as important as cooking it).
Finally, season the steak with a pinch of salt and pepper.
